YUZU HONEY & GINGER MARTINI

Our take on a Bee's Knees with a coastal twist. Yuzu Gin shaken with golden honey, fresh lemon and a hit of ginger, then strained into a chilled coupe. Bright citrus meets warm spice for a martini that drinks like sunshine, even in the cooler months.

Ingredients:
60ml Sunshine & Sons Yuzu Gin
15ml honey syrup (see note)
20ml fresh lemon juice
2 to 3 thin slices fresh ginger
Dried yuzu or lemon wheel to garnish.

Method:
1. Muddle the ginger slices gently in the base of a shaker.
2. Add the gin, honey syrup and lemon juice, then fill with ice.
3. Shake hard until well chilled, around 15 seconds.
4. Double strain into a chilled coupe.
5. Garnish with a dried yuzu or lemon wheel.
