PEACH BEE'S KNEES

A fruity, floral twist on the classic Bee's Knees cocktail — with peach gin, fresh basil, and honey syrup.

Servings: 1

Ingredients:
60ml Wild Peach
20ml fresh lemon juice
15ml honey syrup (1:1 honey & water)
A handful fresh basil leaves
1/4 Peach in small chunks
1 peach slice (for garnish)

Method:
1. In a cocktail shaker, muddle Peach & basil with honey syrup: Add the peach pieces, fresh basil leaves and honey syrup to your cocktail shaker and gently muddle to release the oils. Don't over-muddle or it'll turn bitter.
2. Add ingredients: Pour in 60ml Wild Peach, 20ml fresh lemon juice. Fill the shaker with ice.
3. Shake: Shake hard for about 15 seconds until well chilled.
4. Strain & serve: Double-strain into a chilled coupe or Nick & Nora glass to catch the basil bits. Garnish with a peach slice (for garnish) on the rim or floating on top
